If you're still doing the tooling, I strongly suggest that the deck height be shortened slightly. All factory engines are too loose regardless of gasket thickness, and most aftermarket pistons have smaller compression distances than the original.
This is a major contributor to knocking - excessive quench clearance.
Taking off roughly .030" will be safe in all cases IMHO, and be very helpful since tightening up this distance afterward is very complex and expensive.
