58 Ironhead with S&S shorty

It starts great idles great but when I crack the throttle fast it will choke out the motor completely, if I roll the throttle slowly it sounds and runs good with no stumble. Checked for intake leaks, motor is rebuilt stock. Could this be incorrect jets?

This was a basket case and unfortunately not all the stock stuff was there

Have you checked the accel pump setting? It's adjustable. Turn it down till it doesn't do anything then open it up again just enough to get a decent squirt. Have you tried it with the air cleaner on? You probably never will get it so that it will take throttle if you snap it open too quickly, on the other hand you should be able to roll it on at a reasonable rate. Have you asked your local engine builder what he thinks?

Transition problems...

Usually means throttle is too much closed at iddle. Try opening it a bit on the stop screw and reset your iddle scew. That should help. Also check none of your transition holes are blocked.
